Recipe of the Month



MARYLAND CRAB CAKE PATTIES
(Makes 28 4 oz patties)

2 #  JUMBO LUMP CRABMEAT
2#  ALL LUMP CRABMEAT
4 CUPS  MARYLAND CRAB CAKE BASE (see below)
2 CUPS WHOLE EGGS
1 CUP CRUSHED SALTINE CRACKERS

 

 DO NOT BREAK UP CRABMEAT (CLEAN).
COMBINE CRAB-CAKE BASE, EGGS.  MIX THOROUGHLY. 
GENTLY FOLD IN CRABMEAT USING A RUBBER SPATULA.  DO NOT OVER MIX.
PORTION OUT CRAB CAKES 4 OZ PATTIES PLACE IN A PAN WITH PAPER BETWEEN.
WHEN READY TO COOK, COAT THE OUTSIDE WITH CRUSHED SALTINES.

MARYLAND CRAB CAKE BASE

4 CUPS   HEAVY MAYO
2-1/2 TBLS WORCESTERSHIRE SAUCE
1 TBLS  CAYENNE PEPPER
3 TBLS  OLD BAY SEASONING
¼ CUP  CHOPPED PARSLEY
¼ TSP.  WHITE PEPPER

COMBINE ALL INGREDIENTS,  MIX WITH A RUBBER SPATULA UNTIL FULLY INCORPORATED.
